Benjamin Abouehi Cardamom and Chocolate Biscuits recipe | the bread

cErdom is my favorite spice, and I will sneak it in anywhere and everywhere for more brightness and an herbal scent. My family, on the other hand, isn’t keen on it, so I often have to tone it down and leave a subtle nod in the background. When I want to be selfish, these are the biscuits I make; Light and crumbly, it sets cardamom as the star it deserves.

Biscuits with cardamom and chocolate

Make sure you grind the cardamom seeds fresh from the pods into a mortar for a much better flavor than using the pre-ground stuff.

Make 12 sandwich cookies

200 gm salted butter relaxed
85 grams powdered sugar
1 teaspoon cardamom, fresh
2 egg yolks
230 grams of flour
80g of corn flour

for ganache
150 gm dark chocolate finely chopped
200 ml double cream
25 g unsalted butter, relaxed

Beat butter, sugar and cardamom for three to four minutes, until pale and creamy, then add egg yolks and beat again until blended.

In a separate bowl, mix flour and cornmeal. Place them in the butter mixture and mix until combined. Cover the dough in clingfilm and refrigerate for a few hours until firm.

Preheat oven to 200°C (180°F)/390°F/gas 6 Line baking trays with baking paper. Roll out the cooled dough on a lightly floured surface and use a 6-7cm round cutter to pull out the disks. Re-roll the dough once and cut out as many discs as possible.

Bake the biscuits in batches for 11-13 minutes, until the edges are firm but the biscuits are still pale. Leave to cool completely on a wire rack.

Meanwhile, make the ganache. Put the chopped chocolate in a bowl and heat the cream in a small saucepan until it evaporates. Pour the hot cream over the chocolate, let sit for 20 seconds, then stir until smooth. Mix the butter until it melts, then leave the ganache for 10-15 minutes until it thickens slightly.

Spoon the ganache into the piping bag, cut the end off and put some ganache on half of the biscuits. Put another piece of biscuit on top to make a sandwich and serve.
