It is also known for its cuisine, popularly known as Lou’s Kitchen. According to food experts, it is one of the eight culinary traditions of China. The area is located in the lower reaches of the Yellow River and has a long coastline, specializing in the preparation of fish and seafood. Now Kolkata, which is considered to be the birthplace of Chinese and Indian food, is ready to taste the cuisine of Lo.
Nuri, at the Westin Kolkata Rajarhat, serves le cuisine curated by chef Ablu Bhowmick. Boomick explained that Lu’s cuisine, often called the “mother of Northern Chinese cuisine,” is salty, crunchy, and locks in flavor, not oily. The “bao” style of cooking a stir fry over high heat is common in Lu’s kitchen. Another popular method is the “pa” cooking method in which a layer of flour is covered over the meat, then it is stirred and trimmed until crispy.
“Although we had to adapt via ingredients, partly due to availability issues,” the chef said. “For example, one of the popular dishes in Lou’s kitchen is the braised sea cucumber. But getting sea cucumbers in Kolkata is not easy. So we decided to keep the cooking style using locally available ingredients.” Low-spiced cooking, which is used to accentuate the flavor of the dish.
