  • I’ve been a chef for 15 years, and I love this recipe for Caramel Banana Ice Box Cake.
  • This dessert calls for store-bought cookies and requires no baking.
  • You can divide the cake individually in advance to make it easier to serve.

I’ve been a chef for over 15 years, and ice-box cakes are one of my favorite easy and delicious desserts.

Icebox cakes are made using pre-made ingredients, such as whipped cream and pre-made cookies, and must be refrigerated.

One of my favorite recipes for ice box cake is a mix between tiramisu and banana pudding, which is traditionally made as layered casserole.

My recipe is taken from the best parts of the tiramisu

The beauty of Icebox cakes is that they’ve been assembled the day before and rest overnight in the fridge, making preparation a dream.

There’s no need for baking, and the biscuits soften overnight from the remaining moisture in the pudding and cream.

I’m using Ladyfingers, which is a popular ingredient in tiramisu. I recommend choosing the high-quality ones because they are the basis of the cake.

Whisk together a bowl of the mascarpone mixture for a caramelized banana pudding

Mascarpone adds a light touch of silky cheese.

Tiramisu traditionally calls for mascarpone, a rich and smooth cream cheese. In this case, adding the ingredient to the instant pudding mix adds a silky cheese flavor to the banana flavor.

Choose a little green banana

Slightly green bananas hold their shape better when roasted in a frying pan.

By adding butter, brown sugar, and a pinch of salt, you enhance the caramelized flavors that give this delicious dessert an extra wow factor.

Feel free to try adding a tablespoon of rum or bourbon to the skillet for a boozy kick.

You can divide this delicious dessert individually for easier serving

Everyone loves a big slice of casserole, but splitting the pudding in advance allows your guests to serve themselves, plus you get better control over the presentation.

You can use stemless or stemless wine glasses, goblets, or small mason jars.

  • 3.4 ounce package of Banana and Candy Mix
  • 2 cups milk or alternative
  • 1 cup mascarpone cheese
  • 3 little green bananas
  • 1 tablespoon butter
  • 1/2 cup brown sugar
  • 1 teaspoon kosher salt (plus a pinch of salt for garnish)
  • Lady Fingers 7 ounce package

  1. In a large bowl, whisk the banana pudding mixture with the milk or substitute until completely combined.
  2. In a separate bowl, add the mascarpone cheese and 4 tablespoons of the pudding mixture. Break them up with a paddle attachment or hand mixer and blend any lumps until smooth and creamy. Add this to the pudding bowl and mix. The mixture should thicken slightly while sitting.
  3. Place sliced or halved bananas face down in a dry skillet over medium-high heat. The bottoms should start turning brown after a few minutes.
  4. Turn the heat to medium. Cut the butter into pieces and distribute them around the pan. Let the butter melt completely, then sprinkle brown sugar over it. Add a pinch of salt and stir the pan to distribute the liquid. Cook until butter and sugar are blended into a rich brown color. Turn off the heat and let the contents rest.
  5. Fill a serving bowl halfway with the mascarpone and banana pudding mixture. Then pack a layer of lady fingers tightly, dividing it in halves or thirds as necessary.
  6. Spoon a few caramelized bananas into the center of the ladyfinger ring and keep some pretty pieces for garnish. Add more pudding mix to the middle. Place a browned banana on top and finish with a pinch of salt.
  7. Put it in the refrigerator overnight or for at least two to three hours. Cold service at room temperature.
