Apple Berry Salsa

Preparation time: 15 minutes
Servings: 4-6

  • 2 Envy apples, seeded and chopped
  • 1 strawberry, peeled and chopped
  • 1 liter of blueberries
  • 1/2 teaspoon kosher salt
  • 2 tablespoons honey
  • 2 tablespoons fresh lemon juice
  • Tortilla chips, pita chips, apple chips or graham crackers, to serve
  1. In a medium bowl, combine apples, strawberries, blueberries, and salt.
  2. In a small bowl, whisk together honey and lemon juice. Pour honey and lemon juice over the fruit mixture. Stir together until combined.
  3. Serve immediately with tortilla chips, pita chips, apple chips or graham crackers, or refrigerate until ready to serve.

Blondie apple cupcake

  • 1 1/4 cup all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon kosher salt

  • 1/2 cup (1 stick) unsalted butter, melted and cooled
  • 1 cup light brown sugar, packed
  • 1 teaspoon vanilla
  • 1 large egg, at room temperature
  • 2 Envy apples, peeled, seeded and cut 1/4 inch into cubes
  1. Preheat oven to 350┬░F, line 12-piece muffin pan with cupcake liners and set aside.
  2. In a medium bowl, whisk together flour, baking powder, salt, cinnamon and nutmeg.
  3. In a large bowl, beat butter and brown sugar for 2 minutes or until well blended. Add vanilla and eggs. Whisk until smooth.
  4. Add flour mixture to a large bowl of wet ingredients. stir until just combined; Be careful not to over-mix.
  5. Fold the apple cubes.
  6. Spoon batter evenly into cupcake liners.
  7. Bake for 18-22 minutes, or until a toothpick inserted in the center of the cupcake comes out clean. Let it cool and serve.

Apple, peanut butter and honey sandwiches

Servings: 2 (1 sandwich per serving)

  • 6 tablespoons peanut butter
  • 4 slices of bread
  • 2 tablespoons honey
  1. Apple pulp and thin slices.
  2. Spread 3 tablespoons of peanut butter on 2 slices of bread, reserving 2 slices of bread for sandwiches.
  3. Lay the apple slices on top of the peanut butter.
  4. Sprinkle 1 tablespoon of honey over the apple slices on each sandwich half.
  5. Place a slice of reserved bread on each half of the sandwich.

  • 1 cup all-purpose flour
  • 1/2 teaspoon kosher salt
  • 1 teaspoon cinnamon
  • 2 teaspoons baking powder
  • 2 tablespoons brown sugar
  • 2 eggs
  • 1 cup milk
  • 4 tablespoons (half stick) unsalted butter, melted
  • 1 envy apple, peeled and seeded
  • Non-stick cooking spray
  • 4 tablespoons unsalted butter (half stick), at room temperature
  • Maple syrup to taste
  1. In a large bowl, whisk together flour, salt, cinnamon, baking powder, and brown sugar.
  2. In a smaller bowl, whisk together eggs, milk, and melted butter.
  3. Mix well into the dry ingredients and then mix into the wet ingredient mixture until completely combined.
  4. Using a cheese grater, grate the apples. Put the grated apple in the mixture.
  5. Prepare the waffle iron with non-stick cooking spray.
  6. Pour 1/4 of the batter mixture into a waffle iron and cook according to manufacturer’s instructions. Repeat with the remaining mixture.
  7. Top each waffle with 1 tablespoon of room temperature butter and maple syrup to taste.
