Best grilled chuck roast recipe

Roast chuck is usually cooked in dishes like beef stew and roast, but have you tried it on the grill? Roasting chuck roast is delicious and much quicker than those low, slow ways. Plus, it’s great for year-round eating, unlike the comfort-heavy staples made with roasted chuck. Serve family-style with roasted corn salad and roasted potatoes for a backyard barbecue, or slice and serve on French sandwiches.

Chuck Roast is notorious for being tough, which is why it’s usually cooked to break down the fibres. Here, the marinade does a similar job. Characterized by 1/2 c. Balsamic vinegar to soften meat and give it a wonderful flavour. You may be tempted to reduce the soaking time, but do yourself a favor and plan ahead. The longer the meat is left in the vinegar and oil, the better the result. Thinly slicing against the grain is another great way to soften them.

After a long marinade – at least 12 hours and up to 24 – you will grill the meat for a short time. Seasoned chuck roast takes only 20-30 minutes.

  1. In a large bowl or baking dish, whisk together vinegar, oil, garlic, 1 Tbsp. kosher salt, and 1 tbsp. black pepper. Add grilled chuck and stir until covered. Refrigerate, stirring halfway through, for at least 12 hours or up to 24.
