May 22 is International Paloma Day—and while palomas are popular year-round, today is the perfect day to raise a toast to Mexico’s favorite cocktail.

Not much is known about the history of the tequila-based cocktail, according to TasteCocktails.com.

“Some believe it was named after La Paloma (“the dove”), the popular song composed in the early 1860s,” the site says.

Others believe it was created by “the legendary Don Javier Delgado Corona, owner and bartender of La Capilla, in Tequila, Mexico.”

In its simplest form, paloma is made with tequila blanco, grapefruit soda, or juice and lemon.

Palomas are a tequila-based cocktail mixed with juice and soda. Mr. Black’s Paloma Negra recipe is mixed with coffee liqueur.

However, these days, there are as many variations of Paloma as the margarita.

The caffeinated liqueur is a bittersweet blend of Arabica coffee and Australian wheat vodka.

1 oz Mr. Black

1 ounce mezcal or tequila

1 ounce pink grapefruit
