RICHMOND, VA – Chef Danny Mina and Beverage Director Lauren Spain recently opened Conejo’s newest restaurant at Big Kitchen Hospitality in Richmond, VA.
For Mina, a native of Mexico City, Conejo represents an opportunity for him to show a side of his hometown that finds underrepresented in many Mexican restaurants in the United States.
“Mexico City is very cosmopolitan,” he said. “It’s not the typical idea that a lot of people eat Mexican food. It’s a big city with a lot of activities. That’s my cosplay.” “I am born in the city, born and raised. That is what we are trying to achieve [here]Modern, traditional dining. “
Mina has cooked at some of the big name restaurants in New York City and opened two of his own (Hecho en Dumbo and La Loncheria) before being chosen to lead Conejo Kitchen.
And in this kitchen, Mina said he and his team rely on the highest quality ingredients.
“The quality of the meat we use, the quality of the ingredients we use is much better [to many other Mexican restaurants]”Fortunately, we have the time, effort, knowledge and resources to be able to do this,” he said.
So what should you order on your first visit to Konego?
“The best selling restaurant, and this is every Mexican restaurant, is the guacamole,” Mina said. “People go to a Mexican restaurant and before they look at the menu they order guacamole and a margarita and then look at the menu.” “But really our best seller right now is taco baja. It’s one of the things we play with a lot. We use a fish called hake, which is similar to cod, but a little firmer, but still nice and flaky. We make this beer vodka mixture. So it’s kind It’s somewhere in between like a mixture of Korean fried chicken beer and like Japanese tempura. So it’s crunchy, it’s nice, light and flaky.”
