Best Cucumber Sushi Recipe – How to make Cucumber Sushi

Don’t get us wrong: we’re big fans of traditional sushi with rice. Whether it’s California Rolls, Dragon Rolls, or even Shrimp Tempura Rolls, we love them all! But sometimes we crave something a little more out of the box (sushi stacks? BLT sushi?) and lately we’ve been fulfilling our sushi cravings with our cucumber sushi rolls.

Crispy, refreshing and full of veggies, this cucumber sushi will become a new favorite addition to your sushi dish. It may not be “real sushi”, but it sure is delicious!

How do you make cucumber sushi?

It may seem difficult, but it is surprisingly easy. Simply loosen the center of the cucumber with a teaspoon until you have a long narrow tunnel in the middle of the cucumber, then stuff the avocado, pepper, and carrot slices with slices. After they’re stuffed, you can slice the cucumbers crosswise into 1-inch-thick pieces, just as you would typical sushi rolls, and serve.

What kind of option do we use?

For sushi rolls, the best type of option to use is the English one. Also often referred to as the greenhouse cucumber, this variety is taller and thinner with smaller seeds and a thin, grooved skin that does not need to be peeled. It’s firmer and a bit sweeter than the other varieties, which makes it perfect for this sushi recipe.

What other fillings can I put in sushi rolls?

Anything fits! The sky has no limits, so feel free to experiment with any vegetable or fruit that sounds good to you, including cabbage, radishes, asparagus, green beans, sweet potatoes, or mangoes.   1. Using a teaspoon, remove the seeds from the center of the cucumber until it is completely hollow.
  2. Place the avocado in the center of the cucumber, using a butter knife to press into the cucumber. Next, add sweet pepper and carrots until the cucumbers are completely filled with greens.
  3. Make the dipping sauce: Combine mayonnaise, sriracha, and soy sauce in a small bowl. whisk to combine.
  4. Cut the cucumber into 1-inch thick pieces and serve with the sauce on the side.
