Dr. Rashna Agarwal, a nutritionist, agreed, who said that “arbi, when taken in limited quantity, is very beneficial for weight loss. Rich in antioxidants and vitamin C, it helps build immunity.” She also suggested that the best way to eat this root vegetable is to boil it and make a salad. “Because they are a complex carbohydrate, they should not be combined with oil, and therefore frying should be avoided,” she said.
