JJ of Barnyard Buffet says Barnyard’s Homestyle Mac & Cheese is a classic recipe that anyone can learn.
- 2 lbs. pasta elbow
- 1/3 lb bags of shredded cheese
- 2 sticks unsalted butter
- 4 cups full fat milk
- All-purpose flour
- kosher salt
- white pepper
Preheat oven to 350. Boil 6 liters of water in an 8-liter saucepan with 14 cups of kosher salt.
Once the water boils, add 2 lbs. of elbow macaroni. Stir every 30 seconds until the water begins to boil again. Once it boils again, set the timer for 8 minutes.
Meanwhile, cut 2 pieces of butter into strips and add to a large mixing bowl. Add 1.5 pounds of shredded cheese as well.
After 8 minutes, turn off the heat and drain the pasta. Once dripping has stopped, pour the hot, steamed noodles into a mixing bowl.
Stir this mixture evenly until the butter melts. Set a timer for 10 minutes to let everything set.
After 10 minutes, add 6 tablespoons of all-purpose flour, 2 tablespoons of kosher salt, and ½ teaspoon of ground white pepper. Add 4 cups of whole milk. Mix completely.
Spray a large 10 x 14 casserole dish and add the contents of a mixing bowl to it. Flatten the pasta so that it is even and evenly covered with the grated cheese.
Cover it with cling film first, then cover it with aluminum foil. Bake at 350 for 30 minutes. serve.
Hint: Do not put butter or oil in the pasta water to prevent the pasta from sticking. This will prevent the cheese sauce from sticking to the pasta. Instead, keep stirring the pasta constantly.
