The best pasta recipe with chicken, spinach and artichoke in one bowl

If spinach and artichokes are one of your favorite sauces, this easy one-pot pasta is for you. It’s super easy to throw together and totally cheesy. We love that pot-cooked pasta goes with just about anything else, which makes dinner hassle-free. This dish is very convenient with little effort.

Boneless, skinless chicken breasts (about 2 lbs.)

Freshly ground black pepper

2 tbsp.

  1. Season the chicken with Italian spices, salt and black pepper. In a large, high-sided skillet over medium heat, heat the oil. Cook chicken until golden, about 5 minutes per side. Transfer the chicken to a plate.
  2. Reduce heat to medium and cook shallots, stirring occasionally, until softened, 5 minutes. Add garlic and cook, stirring, until fragrant, another minute. add broth, pasta, artichokes and cream; Season with thyme, red pepper flakes, salt and black pepper. Return the chicken to the skillet. Bring to a boil, cover, then reduce heat to medium-low. Simmer, stirring occasionally, until pasta is tender and chicken is cooked through, 12 to 15 minutes. Transfer the chicken to a cutting board.
  3. Add the mozzarella and Parmesan cheese to the pan and stir until melted, then add the spinach and stir until wilted.
  4. Cut the chicken into strips and return it to the skillet. Stir the mixture, then add more Parmesan cheese.
