Thurston County Restaurant Inspections July 6, 2022

Reading test scores:

  • Pay attention to the type of violation (red vs. blue) and whether the restaurant has a history of red violations or repeat violations.
  • Red violations are those most likely to cause foodborne illness and should be corrected immediately if possible or according to a compliance schedule established by the health official. Example: Not keeping food at the right temperature.
  • The blue violations are related to hygiene and operating condition and must be corrected according to the compliance schedule established by the health official. Example: a worn floor that needs replacing.
  • Some common abbreviations: PHF/TCS Potentially Food Hazardous/Time Control for Safety; ready to eat ready to eat; PIC is the responsible person; FWC is a food worker card; The CDI is corrected during the scan.

Comments: There was no hand sink near the outside barbecue area.

Comments: The chlorine disinfectant used was too strong and needed to be diluted with water.

June 18: 10 red; 10 blue.

Comment: Some items in the fridge were warmer than 41 degrees. Disinfectant test strips were not available during the examination. The hand basin was pulling very slowly and needed repair.
