Mexico-focused wine bar to open in San Francisco serving Yucatecan cuisine

SAN FRANCISCO – On Thursday afternoon, the owners of Cantina Los Mayas in the Richmond area were preparing for their grand opening Thursday night.

As far as they know, they say they are the first Mexican wine bar in the country. They will have a list of exclusive Mexican wines available – 45 to be exact. And many of them come from El Valle de Guadalupe in Mexico.

Co-owner Morgan Anderson said: “A lot of these wineries do a lot of blending – sometimes unusual blends – and to some avid wine drinkers that might seem a little unusual. But the flavor is the best outcome in the end.” . “If you’re talking about a single grape, there’s still variety in it, but the climate is different. If you’re drinking nebbiolo from Mexico, it’s a different climate than Italy. If you’re drinking big cab, it’s a different climate than Napa, so it will taste a little different.” .but they are not afraid to experiment.”

In addition to the wine list, those who dine can expect authentic food with spices and seasonings from Yucatan, Mexico.

Behind the food, you’ll find Cantina Los Mayas co-owner Juventina Los Mayas.

“My dad cooks a lot, my mom, my aunt, so I basically learned all this from them,” said Carrillo Intrian. He grew up in Yucatan, and the influence behind the list comes from his home.

On the menu, you’ll see a variety of dishes including panuchos, which are crunchy Mayan tacos filled with fried beans with a choice of meat. There are tacos, ceviche, and dishes that many in California might not necessarily associate with Mexican food.

But Carrillo-Interian said that’s the point. He wants people to see that Mexican food isn’t just tacos and burritos. There is diversity that takes time. He said most of the spices they use come directly from the Yucatan.

Carrillo-Interian added that everything would be gluten-free because traditionally, his family would cook with corn instead of flour.

The food will be a little different than the Taquería Los Mayas which is located a few blocks away that they also own. The fare at Cantina Los Mayas will be a little more elegant.

“Every dish, we plan to make a different sauce, but we play with spices,” said Carrillo Entryan.

Every aspect from the wine to the food and design is well thought out.

Co-owner Vincent Lamm said, “We were thinking of Guadalupe Valley, the Guadalupe Valley a very dry, dry climate. Borrowing from that, we came up with this elegant desert design.”

On opening night, many diners tried Mexican wine for the first time.

“This is the Nebbiolo I believe in,” said Katie Harper of San Francisco. “It’s really plump, really light, really smooth and will go well with the duck I got for dinner.”

As people enter and experience Cantina Los Mayas, the owners say the goal is to showcase the Mexican wine and the variety that comes with it.

Cantina Los Mayas is located at 431 Balboa Street in San Francisco and will be open Thursday through Sunday. Reservations can be made on the wine bar’s website.
